Is "Baking Grade" really the best choice for sweets? The honest answer is: Yes and No. While you want to save money, using the cheapest "Culinary Grade" often results in sweets that are just bitter without any real tea aroma.

The "Dark Side" of the Matcha Market

Here is a truth most vendors won't tell you: Many "Matcha" products on the global market are not actually Matcha. 
Authentic Matcha must be shaded (covered with "Korensha" cloth) for 2?3 weeks before harvest to develop Umami. However, due to the global boom, many products are only shaded for a few days?or not at all. These are just "Green Tea Powder" labeled as Matcha. They are dull in color, weak in aroma, and no better than the tea powder found at conveyor-belt sushi restaurants.
 

The Professional "Golden Middle"

If you want to recreate the rich, professional flavor of a Japanese café, we recommend using "Practice Rank" (Entry-level Ceremonial) matcha.

  • Why avoid the cheapest? They are often processed to withstand heat but lack the soul of the tea.

  • Why avoid the most expensive? Premium tea (over JPY 3,000) is too delicate; its subtle nuances get lost when mixed with butter or sugar.
     

Our recommendation: Matcha in the range of JPY 1,500?2,000 per 100g.
